Healthy Breakfast Stir Fry
Makes 2 servings
1 Tablespoon cold pressed Coconut Oil or olive oil
1 Small yellow onion- diced
100grams of any meat of your choice- or you can use salmon
3 cloves of garlic- (local and organic is best), minced
2 Cups of cubed Jicama
Sprinkle of mixed dried herbs: paprika, cracked pepper, onion powder, Cayenne pepper, dried oregano, sage, thyme and Sea salt.
Add oil and diced onions to a large frying pan.
Cook on medium – high heat for 5 minutes- stirring frequently.
Add diced meat (or salmon) and garlic and cook for 3 minutes (or according to your taste), continuing to stir.
Drop in cubed jicama, herbs and sea salt.
Cook for a total of 10 minutes, adding 1 Tablespoon of water every couple of minutes and stirring to avoid burning.
Serve with eggs- poached, sunny side up or slices of avocado.
